Can you give me some Recipes for Birthday Cakes please? Ones that are easy to ice?

1st birthday cake, so preferably no nuts, people of all ages eating it from 1-75 years old.

Depends what sort of finished result you want and how old those who are eating it will be. Young children, adults etc? Few more details might help.

I’d suggest making the cake in a rectangular tin as it is much easier to slice a rectangular cake evenly than a round one if there are lots of people around. The following ingredients will each make enough to fill a 23 cm x 15cm (or 6inches by 9) tin once so if you want to make a grand cake you could make two or three layers!

For a plain sponge:
110g self raising flour
1 tsp baking powder
110g soft marg eg Stork
110g castor sugar
Few drops of vanilla essence

For a chocolate sponge:
110g self raising flour then take out 1 tbsp of flour
1tsp baking powder
1 tbsp of cocoa powder
110g soft marg
110g castor sugar
3 eggs
Start by preheating oven to 180degrees C or 350 F, gas mark 4

1 Sieve the flour, baking powder and cocoa powder if using together into a bowl.
2 Add soft marg, sugar and eggs to the bowl.
3 Mix well with wooden spoon although electric mixer is far easier.
4 Line your Cake Tin with greaseproof paper and grease the paper too.
5 Spoon in cake mix and smooth over as evenly as you can.
6 Bake for 30-35 mins. You’ll know if it’s done as when you press the middle of cake lightly it’ll spring back again.
7 Leave for a couple of mins and then turn out on to a cooling rack. Cool completely.
8 As you mustn’t give raw cake mix to children you can lick the bowl out yourself.

For butter icing

The basic recipe is
75g soft marg or butter
225g icing sugar
1 tsp vanilla essence
1 tsp of milk.

1 Sieve icing sugar into a bowl.
2 Add marg/butter, vanilla essence and milk.
3 Beat well using an electric mixer.
4 If the icing is not smooth and light try adding another tsp of milk and beat. If need be add a third tsp.

If you want chocolate icing
Don’t use vanilla essence and milk. Instead melt a bar of chocolate and add this to the butter and icing sugar and mix well.

Cover cake. Dip your knife in a cup of boiling water as this makes it easier to spread the icing. If it drizzles over the edge this doesn’t matter as it’ll look artistic.

Decorate with milk chocolate buttons on chocolate cake or milk chocolate on plain icing round the edge. Down the middle you can spell out Happy Birthday + child’s name with silver balls (don’t give to baby)

If you have children coming you could make another batch of cake mixture and make Cup Cakes. These will take 15-20 mins to cook. If you make a contrasting icing to the main cake you can arrange them around the main cake. You could put a separate candle on each cake so each child can blow out their own candle and make a wish as they cut their little cake.
