Banana Mousse Cake
Ingredients:
1 cup sugar
1/2 cup butter
2 eggs
3 mashed bananas
1-2/3 cups all-purpose flour
1/2 tsp. soda
1 tsp. baking powder
4 Tbsps. low fat yogurt
1/2 tsp. almond flavoring
Slivered almonds (1/4 – 1/2 cup)
Prep:
Cream sugar and butter. Add eggs and bananas. Combine dry ingredients in a bowl. Alternate dry ingredients and yogurt to mixture. Add flavoring. Beat well. Pour into greased 13×9 inch baking pan. Bake at 350 for 20-25 minutes or until done. Let cool, frost with your favorite frosting, top with slivered almonds. Cut into squares and serve.
